Beef Short Ribs…For the First Time

I have always wanted to try making Beef Short Ribs.  Every time I go to a restaurant and they are featured on the menu, that is typically what I would order.  The same with Crab Cakes…but that’s a whole other conversation!

So I was at the Butcher Shop (which is conveniently located beside my office) and they had packages of Beef Short Ribs as a special. They don’t have them a lot so I grabbed the opportunity to get them and try to make them!

I looked around online and went through  a couple of recipes, but either I din’t have everything needed or was going to take too much time. So I just did my own thing and they turned out AWESOME!

What you need:

– Beef Short Ribs
– Black Pepper
– Kosher Salt
– Coconut Oil
– Thyme
– White Onion
– Cherry Tomatoes
– Bottle of Red Wine

First things first get your oven on! I have a great Slow Cooker option on my oven so I put mine on the high setting.  Grab a pan or pot, something with a good lid and that is also safe to put in the oven.  I have an amazing pan from Epicure called the Everything Pan…the name is perfect because it is literally perfect for everything.  I use it all the time. Get in a good amount of Coconut Oil and get it to a really good high heat.  You want to now season the meat.  Always try to make sure that your meat is at room temperature.  I love fresh ground pepper so I use a little bit more and then put a good amount of kosher salt on them as well.  Once the pan is at a good heat you want to sear the meat on all sides so that it has a good crust on the outside.  Remove the beef from the pan and reduce the heat.  Put in the chopped Onion and I also throw in some Garlic.  Let the Onions cook for a little bit so that they soften up a bit.  Once that is ready, remove it from the heat and put the beef back in the pan.  Pour in your WHOLE bottle of wine.  Which reminds me, Julia Child said that when cooking with wine, if you wouldn’t drink it then you shouldn’t cook with it.  That has always stuck with me, so don’t be cheap and use a good one! Throw in a good handful of Thyme, the Cherry Tomatoes, put the lid on, throw it in the oven and WALK Away!

Mine stayed in the oven for about 6-7 hours and when I took them out, the meat just fell right off the bone. THEY were awesome! These would be really good served with garlic mashed potatoes or for an alternative have them on mashed cauliflower (my favourite!).

Birthday Weekend BBQ

I believe that the best meals are those that are prepared by everyone and that was exactly how my long weekend went. We had a busy household with my Mother-In-Law, Mrs. Gartner, My Hubs Brother, Mr. Gartner and his girlfriend, Ms. MacLachlan, My Hubs Twin Sister, Ms. Gartner and her boyfriend, Mr. Hasenuik! It was great to have everyone together for an early birthday celebration for my Hubs and his sister.

Over the weekend we cooked, laughed, had a few cocktails and really spent a lot of much needed time visiting. It was great!

One of the best dinners we had was Beer Can Chicken, Corn on the Cob and a delicious Shredded Kale salad that Ms. MacLachlan made. The Shredded Kale salad was so awesome and I know I will be making it again in the future. Check out the recipe here at JustaTaste!

21 Day Clean Eating Cleanse…FINISHED!

Well that is that…I finished my cleanse! After the 2nd Week of Juicing I welcomed the 3rd week with open arms! I was so happy to eat something it wasn’t even funny!

My 3rd week was going back to how I was eating the 2nd week and reintroducing foods. I have taken a lot from this cleanse. It really pointed out to me areas in my diet that were really not good. Also I used to eat a lot at night, especially right before bed. It was nothing for me to have a bagel with peanut butter right before going to bed and then wondering why it took me forever to get to sleep? Hmmm I wonder why!s

My hubs and I have decided to bring more of a Clean Eating/Paleo diet into our lives. After reading more about the Paleo way of eating, it actually makes a lot of sense for us to follow it. Paleo is mainly Dairy Free & Grain Free and trying to eat as organically as possible. That being said, am I never going to eat pasta, rice or bread ever again? Probably not, instead of putting all these limits on myself and just setting myself up to fail, I have to realize that I will probably have pasta, rice or bread at some point again…and that is OKAY!

A lot of people that follow the Paleo Diet, follow a 80/20 rule. 80% of the time is strict Paleo and 20% of the time is not. This works for me, I honestly love food way too much to try and say that I will never have a bad carb or grain ever again in my life.

Paleo is not for everyone, just like Clean Eating or Weight Watchers or any other diet. My best advice is read into everything and ask yourself if it is something that you can do. Make sure that your diet is going to work with your lifestyle.

Now when chatting with friends I have been asked if I would do this cleanse again and I can honestly say that I definitely will! I feel more refreshed, energized and ready to start a change! I can see myself doing this again after vacations and holidays to bring myself back on track!

3rd Week

21 Day Clean Eating Cleanse Challenge…Juice Week

JUICING! So I am on day 5 of the Juice portion of my cleanse. The recommendation is for 3-7 days of Juicing or as long as you can handle it. I am at day 5 and feel that I’ve had all I can handle!

Just like the first week, this stage took a lot of planning as well. So I went with the same steps and planned out everything which also made it a lot easier for grocery shopping. My first couple of days started out really well with the Juicing. I felt pretty good, had energy, a little hungry but not too bad. But as the days went on I feel myself getting very tired and very hungry. Very hungry for food!

When talking with fiends that have done a juice cleanse before, some of them had weird reactions. I noticed that in the first couple of days my face was a little itchy and really if I am being honest, for the last 5 days I have been just a tad bit irritable…just a little bit.

So what am I going to take away from the 2nd portion of this cleanse?

– I actually really like beet juice! Especially mixed with Mango, Cucumber and Celery (my fave!)!
– This summer I really want to make our own juice at home!

What did my husband take away from my juicing? He also wants us to make fresh juice…but for fresh cocktails…haha…

So now for my 3rd week, I am back to what I was doing in the first week and I am so excited to have food again!

21 Day Clean Eating Cleanse Challenge

So I have been thinking about doing a cleanse for a little while. If you go online and search for cleanses you can come up with millions of them, which to be completely honest just overwhelms me. Instead, I started talking with friends about different options and if they have done one before. My good friend Mrs. M, follows a clean eating lifestyle and was about to try doing a cleanse herself! Perfect! She passed the plan to me and I decided to go for it!

The cleanse that I decided to do is a 21 Day In Balance Cleanse. In the instructions of the cleanse it talks about being 100% organic, I am about 80% organic on mine and that is mainly because I can’t get 100% organic everything where we live. But that is okay for me!

So my main goal for the cleanse was to do a restart with my food and diet. My Hubs and I have been travelling a lot and with that comes eating and drinking poorly. Which don’t get me wrong, I love travelling and trying new restaurants and foods, but after awhile I feel sluggish and tired. So I thought just give it a shot, what is the worst that could happen?

My Cleanse is broken down into 3 weeks:

Week 1 – Elimination
Week 2 – Juices
Week 3 – Reintroduction

Especially for Week 1, I decided to plan out all my meals. It was probably the best thing that I could have done to be perfectly honest. From there I made a big shopping list and off I went!

The whole idea for week one is to start your day with hot water and lemon and then for breakfast I have a smoothie. I have been mainly having 2 smoothies:

Green Smoothie:

1 Organic Apple (with peeling, cored)
Juice of 1 Lemon
1 cup of spinach
1 stalk of celery
1/3 cup of cilantro (if you don’t like cilantro you can use parsley)
1 tbsp of chia seeds
Cold Water
1 tsp Super Greens

Frozen Green Chai Latte:

1/2 an avocado
1.5 Cups of Almond Milk
1 tsp of pumpkin pie spice
1/2 tsp of vanilla
stevia to taste
1 tsp of super greens (can be found on
Couple good handfuls of ice

I just have to say that the Frozen Green Chai Latte is amazing. I don’t like Chai Latte or Pumpkin Pie for that matter but I love this!

For lunch you need to have a solid meal.

One of my lunch meals is a green salad with a Salmon Filet, 2 cups of Green Beans, 1 tbsp of Dijon Mustard, Fresh Lemon Juice and Salt and Pepper.

For dinner I have soup and my favourite so far is the Zuchinni Cauliflower Soup!

Heat a large soup pot with 2 tbsp of coconut oil and put in 1 onion chopped and 1 large zuchinni (chopped). Once the onions have become softer throw in some basil and rosemary and then add 2 cups of chopped cauliflower add in your water and cook until your cauliflower is soft. Then carefully…pour into your blender and blend til smooth. Season with Salt and Pepper and Enjoy!

My tips for Week 1:

– Drink a ton of water! No word of a lie especially in the first couple of days when I couldn’t have coffee, I was so nauseous and had the worst headache, the only thing to stop it just for a little bit was to drink water!

– Be prepared to have headaches and be a little irritable.

– I found that when I got home I would start to cook my soup and my Hubs would start to cook his dinner as well at the same time. At first I thought it would bug me, but it helped to be cooking at the same time.

– Keep yourself busy! Evenings are probably the worst for me, that’s definitely when I like to snack so I am spring cleaning and purging my house of unwanted stuff!

– Keep a food journal! I track my meals and notes of how I am feeling through out the day

– Drink lots of Water!

I have 2 more days left for my week 1 and then I am on to Week 2: Juicing! Stay Tuned!
